Pâté is a charcuterie specialty which has been made in Europe since the Middle Ages. The first French pâté recipe was written in the 14th century ! French foie gras can be made with either goose liver or duck liver. Most products contain the latter. Duck foie gras has a rich, strong flavour and a delicate texture. In France, it is part of a traditional Christmas meal and is often eaten at weddings or during New Year celebrations.
